Perfect for a satisfying dinner packed with bold, fresh flavors and customizable toppings.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Marinade + Grilled Chicken:

  • 4 small boneless, skinless chicken breasts
  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice

Mexican Street Corn Salad:

  • 2 cups grilled corn kernels (approx. 34 ears of corn)
  • 1/3 cup mayonnaise
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 12 tablespoons lime juice
  • 1/2 tablespoon garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup red onion, diced
  • 1/4 cup cotija cheese, crumbled

Other Rice Bowl Options + Toppings:

  • 4 cups cooked rice of your choice
  • Black beans (optional)
  • Cherry tomatoes, halved (optional)
  • Jalapeño slices (optional)
  • Lime wedges
  • Additional fresh cilantro leaves
  • Sour cream
  • 12 avocados, sliced

Instructions

  1. Marinate Chicken: In a bowl or container, whisk together soy sauce, olive oil, Worcestershire sauce, minced garlic, and lemon juice. Place chicken breasts in the marinade ensuring they are fully coated. Cover and refrigerate for 15 minutes to up to an hour to allow flavors to infuse.
  2. Prep Grill: Preheat your grill to medium heat, around 400-450°F (204-232°C). Clean the grill grates thoroughly to prevent sticking and ensure nice grill marks.
  3. Grill Chicken - Sear: Remove chicken from marinade, letting excess drip off. Place chicken breasts directly over the medium heat and sear for 4-6 minutes on each side, developing a good char and locking in juices.
  4. Finish Cooking Chicken: Move chicken to indirect heat on the grill while maintaining the temperature. Cook for an additional 5-7 minutes without flipping until the thickest part reaches 160°F (71°C) on a meat thermometer.
  5. Rest Chicken: Remove chicken from grill and let rest for at least 5 minutes. This allows juices to redistribute, and the internal temperature will climb to 165°F (74°C), ensuring it is safe to eat. Slice or cube the chicken.
  6. Grill Corn: While the chicken marinates or cooks, preheat grill to high heat (450°F/232°C). Lightly drizzle shucked corn ears with olive oil, sprinkle with salt, and grill directly over heat, turning every 2-3 minutes for 8-10 minutes until kernels are charred and slightly smoky. Let cool, then cut kernels off the cob.
  7. Make Street Corn Salad: In a large bowl, combine grilled corn kernels, mayonnaise, crumbled feta, chopped cilantro, lime juice, minced garlic, chili powder, paprika, kosher salt, black pepper, diced red onion, and crumbled cotija cheese. Stir well to blend flavors. Taste and adjust seasoning or lime juice as desired.
  8. Build the Bowls: Divide cooked rice evenly into four bowls. Top each with the grilled chicken slices and a generous scoop of street corn salad.
  9. Customize and Serve: Add optional toppings to your preference such as black beans, cherry tomatoes, jalapeño slices, extra cilantro, sour cream, avocado slices, and lime wedges. Serve immediately and enjoy!

Notes

  • Cooking Logistics: You can grill the corn and chicken simultaneously or one after the other based on your grill space and timing preferences.
  • Dairy-Free Option: Use dairy-free feta and omit cotija cheese to make the salad dairy-free.
  • Serving Temperature: The street corn salad tastes great slightly warm or at room temperature but can also be served cold.
  • Storage: Store leftovers in an airtight container refrigerated for up to 3 days. Reheat chicken separately to maintain texture.
