Instructions

  1. Prepare the Base Mixture: In a medium bowl, combine the diced red onion, whole kernel corn, sour cream, softened cream cheese, pepper jack cheese, and 2 tablespoons of Chugwater Chili Seasoning. Mix well to ensure all ingredients are incorporated evenly.
  2. Oven Method: Transfer the mixture into a baking dish. Preheat the oven to 375°F (190°C) and bake for 50 minutes, or until the dip is heated through and bubbly. Remove from oven.
  3. Stovetop/Skillet Method: In a medium skillet, sauté the diced red onion with 2 tablespoons of butter until softened. Add the corn and continue to sauté briefly. Then add the sour cream, cream cheese, pepper jack cheese, and chili seasoning. Stir continuously over medium heat until the cheese melts and the dip is warm.
  4. Slow Cooker Method: Begin by sautéing the diced red onion and corn in 2 tablespoons of butter in a medium skillet. Transfer this sautéed mixture to a slow cooker. Add the sour cream, softened cream cheese, pepper jack cheese, and chili seasoning. Cook on high for 3 hours or low for 5 hours until the cheese melts and the dip is thoroughly heated.
