  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

Tomato Avocado Salad:

  • 1 avocado, diced
  • 1 cup halved cherry tomatoes
  • ¼ cup minced red onion
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon grapeseed oil or avocado oil
  • 1 teaspoon grated lime peel
  • 1 tablespoon lime juice
  • Salt to taste

Sweet Potato and Zucchini:

  • 2 tablespoons avocado oil or oil of choice, as needed to coat the pan
  • 1 sweet potato, chopped into 1-inch cubes
  • 1 zucchini, chopped into 1-inch cubes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon mild chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Scrambled Eggs:

  • 1 teaspoon grapeseed oil or avocado oil, or as needed to coat the pan
  • 2 eggs, beaten
  • Salt and pepper to taste

Optional for Serving:

  • Fresh cilantro leaves
  • Mexican-style hot sauce

Instructions

  1. Prepare the Tomato Avocado Salad: In a mixing bowl, gently stir together diced avocado, halved cherry tomatoes, minced red onion, chopped cilantro, grapeseed or avocado oil, grated lime peel, and lime juice until well combined. Season with salt to taste and set aside to let flavors meld.
  2. Cook Sweet Potato and Zucchini: Heat avocado oil in a 12-inch skillet with a lid over medium-high heat. When the oil becomes translucent, add the cubed sweet potato. Cover and cook for 12 minutes, stirring every few minutes until the sweet potato is tender and has browned edges. Remove the lid, then add the chopped zucchini along with ground cumin, coriander, chili powder, garlic powder, and cayenne pepper if using. Cook uncovered for about 3 minutes, stirring occasionally, until zucchini softens and spices release their fragrance. Season with salt and pepper, cover, and remove skillet from the heat to keep warm.
  3. Cook Scrambled Eggs: In an 8-inch nonstick skillet over low-medium heat, warm grapeseed or avocado oil until translucent. Pour in beaten eggs and cook gently for about 5 minutes, stirring every 30 seconds with a spatula until eggs are thickened and no liquid remains. Season with salt and pepper to taste.
  4. Assemble the Bowls: Divide the tomato avocado salad and the sweet potato and zucchini mixture evenly between two bowls. Top each bowl with half of the scrambled eggs. Garnish optionally with fresh cilantro leaves and a drizzle of Mexican-style hot sauce for extra flavor.

Notes

  • Vegan variation: Substitute the scrambled eggs with 1 cup tofu scramble, black beans, or pinto beans for a plant-based alternative.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days for optimal freshness.
