This Sweet Potato Casserole with Marshmallows is a gooey, delicious holiday favorite that combines creamy mashed sweet potatoes with brown sugar, butter, and a touch of orange juice, topped with golden, toasted miniature marshmallows. Perfect for making ahead and reheating to impress your family and guests.

  • Total Time: 1 hr
  • Yield: 1 (9x13-inch) casserole, serves 8

Ingredients

Sweet Potato Mixture

  • 5 sweet potatoes, peeled and sliced
  • ½ cup packed brown sugar
  • ¼ cup butter
  • 3 tablespoons orange juice
  • 1 pinch ground cinnamon

Topping

  • 1 (10.5 ounce) package miniature marshmallows

Instructions

  1. Preheat and Prepare Potatoes: Preheat your oven to 350 degrees F (175 degrees C). Place the peeled and sliced sweet potatoes in a large saucepan and cover them with water.
  2. Boil and Mash: Bring the water to a boil and cook the sweet potatoes until they are tender, approximately 15 minutes. Drain the water and mash the sweet potatoes thoroughly.
  3. Mix Ingredients: Transfer the mashed sweet potatoes to a large bowl. Add the brown sugar, butter, orange juice, and a pinch of ground cinnamon. Use an electric mixer to blend all the ingredients until smooth and well combined.
  4. Assemble the Casserole: Spread the sweet potato mixture evenly into a 9x13-inch baking dish. Evenly sprinkle the miniature marshmallows over the top of the mixture.
  5. Bake and Toast Marshmallows: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the casserole is heated through and the marshmallows have puffed up and turned a beautiful golden brown.

Notes

  • You can prepare this casserole a day ahead and refrigerate; just increase baking time slightly when reheating.
  • For a nutty twist, sprinkle chopped pecans on top along with the marshmallows before baking.
  • If you prefer a less sweet casserole, reduce the amount of brown sugar or marshmallows.
  • Use fresh orange juice for best flavor; canned juice may alter the taste.
