A hearty and colorful Sweet Potato Hash featuring tender cubes of sweet potatoes sautéed with bell peppers and onions, mixed with your choice of cooked meat, and topped with fried eggs, avocado slices, and fresh cilantro. Perfect for a satisfying breakfast or brunch.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 sweet potatoes (about 1 pound total), peeled and cut into ¾-inch cubes
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • ½ small yellow onion, thinly sliced
  • 1 to 2 cups cooked meat (crumbled sausage, chopped bacon, shredded chicken, or carnitas)
  • ½ teaspoon kosher salt, or to taste
  • 2 large eggs, fried
  • 1 avocado, thinly sliced (optional)
  • Fresh cilantro, for serving (optional)

Instructions

  1. Heat the oil: In a medium skillet, warm 2 tablespoons of extra-virgin olive oil over medium-high heat to prepare for sautéing the vegetables.
  2. Cook the sweet potatoes: Add the peeled and cubed sweet potatoes to the skillet. Cook, turning occasionally, until they start to brown evenly, about 5 minutes. Adjust heat as needed to prevent burning.
  3. Add peppers and onion: Stir in the thinly sliced red and green bell peppers along with the yellow onion. Continue cooking, stirring regularly, until all the vegetables are tender, approximately 10 more minutes.
  4. Incorporate cooked meat: Mix in your choice of 1 to 2 cups of cooked meat such as sausage, bacon, chicken, or carnitas. Cook until the meat is heated through thoroughly.
  5. Season: Sprinkle ½ teaspoon kosher salt over the hash, adjusting more or less to taste. Stir to combine the seasoning evenly.
  6. Plate and garnish: Divide the sweet potato hash evenly onto 4 plates. Top each serving with a fried egg, sliced avocado if using, and a sprinkle of fresh cilantro for added flavor and freshness.

Notes

  • Use a sturdy skillet for even cooking and better browning of sweet potatoes.
  • Cooked meat options provide flexibility and can be tailored to your preference.
  • Adjust salt level to your taste or dietary needs.
  • Frying eggs separately allows you to control the doneness to your liking.
  • Avocado and cilantro are optional, but they add fresh creaminess and herbal notes.
  • This dish pairs well with hot sauce or salsa for extra zing.
