Ingredients
Sweet Potato Toast Base
- 1 large wide sweet potato
- Cooking spray
- Salt to taste
Suggested Toppings
- Cream cheese with blueberries and chia seeds
- Ricotta cheese with raspberries and coconut
- Peanut butter with banana slices and cinnamon
- Cottage cheese with tomatoes and everything seasoning
- Fried egg with fresh chopped parsley, salt and black pepper
- Avocado mashed with lime juice, salt and pepper
Instructions
- Prepare the Sweet Potato: Using a large sharp knife, trim off the bottom stem of the sweet potato and place it cut side down on a cutting board. Keep the skin on for ease of handling.
- Slice the Potato: Carefully slice the sweet potato into about 6 thin slices approximately 1/4 to 1/3 inch thick, cutting from one end to the other. Aim for even thickness to toast uniformly.
- Season the Slices: Lightly spray the sweet potato slices with cooking spray and sprinkle with salt to taste to enhance their natural flavor.
- Toast the Sweet Potato (Toaster Method): Insert the slices into a toaster or toaster oven on high setting, similar to how you toast bread. Toast until the slices pop up and check for fork tenderness. Toast longer if necessary, adjusting the toaster to medium if browning too quickly.
- Toast the Sweet Potato (Oven Method): Preheat the oven to 350°F (175°C). Place the slices on a wire rack set over a rimmed baking sheet. Bake for 15-20 minutes until the slices are fork tender but still hold their shape.
- Cool Before Topping: Remove the toasted sweet potato slices from the toaster or oven and allow them to cool on a wire rack. This helps them firm up slightly and prevents sogginess when toppings are added.
- Add Your Favorite Toppings: Once cooled, add sweet or savory toppings of choice as listed or create your own combinations for a nutritious, delicious meal.
Notes
- Nutrition information provided is for one slice of plain sweet potato toast without toppings.
- Store any leftover sweet potato toast slices in an airtight container separate from toppings to prevent sogginess; lasts 3-4 days refrigerated.
- Reheat leftover slices by toasting for about 1 minute before serving.
- Do not overcook the sweet potato slices; they should be fork tender but still firm to hold toppings well.
- Leftover halves of the sweet potato can be roasted or diced for sweet potato hash or used in other recipes.
