- 12 ounces Mushrooms (white or cremini)
- 1 cup Red Onion (cut into 2-inch cubes, layers separated)
- 1/2 cup Green Bell Pepper (cut into 2-inch cubes)
- 1/2 cup Red Bell Pepper (cut into 2-inch cubes)
- Lime wedges (to garnish)
Marinade
- 1/2 cup Plain Yogurt (thick or Greek/hung curd)
- 3/4 tablespoon Ginger paste
- 3/4 tablespoon Garlic paste
- 1 tablespoon Lime juice
- 2 teaspoons Kashmiri red chili powder (mild, adjust to taste)
- 1/2 teaspoon Ground Turmeric (Haldi powder)
- 1 teaspoon Garam Masala
- 1 teaspoon Coriander powder (Dhaniya powder)
- 2 teaspoons Gram flour (Besan)
- 1 teaspoon Salt (adjust to taste)
- 1/2 tablespoon Dried Fenugreek leaves (Kasoori Methi) (optional)

Instructions
- Prepare the Marinade: In a bowl, combine plain yogurt, ginger paste, garlic paste, lime juice, Kashmiri red chili powder, ground turmeric, garam masala, coriander powder, gram flour, salt, and dried fenugreek leaves (if using). Mix thoroughly to form a smooth marinade.
- Marinate Vegetables: Add the mushrooms, red onions, and bell peppers to the marinade. Toss gently to coat all pieces evenly. Cover and refrigerate for at least 30 minutes, up to 24 hours, to let the flavors infuse.
- Thread the Skewers: When ready to cook, thread the marinated mushrooms, onions, and bell peppers alternately onto skewers, ensuring an even distribution.
- Air Fryer Method: Preheat the air fryer to 400°F (200°C) for 5 minutes. Lightly grease the air fryer basket. Place the skewers inside and lightly brush or spray them with oil. Cook for 6-8 minutes, turning the skewers at the 4-minute mark to ensure even cooking.
- Oven Method: Preheat oven to 425°F (220°C). Line a baking pan with parchment paper or foil and place a rack on top. Arrange the skewers on the rack and lightly brush or spray with oil. Bake for 12-15 minutes until mushrooms are roasted. For char marks, switch the oven to broil and broil the skewers for 2-3 minutes, watching closely to avoid burning.
- Stovetop Grill Method: Heat a grill pan and spray it with oil. Place the skewers on the pan and cook from all sides until they turn golden brown. Optionally, spray a bit of oil onto the skewers and briefly roast them over open flame while turning to achieve charred edges.
- Outdoor Grill Method: Preheat an outdoor grill and generously spray with oil or line with aluminum foil sprayed with oil to prevent sticking. Place the skewers on the grill and cook for 6-8 minutes, turning halfway through until mushrooms are roasted with nice char marks.
- Garnish & Serve: Once cooked, squeeze fresh lime juice over the tandoori mushroom tikka. Sprinkle chaat masala if desired for extra tang and spice. Serve warm, ideally accompanied by cilantro chutney.
