- 1 can coconut cream (400 ml)

- 3-6 tbsp Thai red curry paste (ensure no fish products on label)
Instructions
- Prepare Aromatics: Heat oil in a deep pot over medium heat. Add chopped onion, carrot, garlic, and ginger, cooking for 5-10 minutes until tender and fragrant, forming the flavor base for the soup.
- Simmer Soup Base: Add water, cauliflower florets, drained cannellini beans, coconut cream, makrut lime leaves, and salt to the pot. Bring to a simmer and cook until the cauliflower is tender, ensuring all flavors meld beautifully.
- Blend Until Smooth: Carefully blend the soup in batches using a blender until silky smooth, creating a creamy texture without lumps.
- Incorporate Curry Paste: Return the blended soup to the pot and gently reheat. Stir in Thai red curry paste to taste - typically 4 tablespoons work well for moderate heat suitable for children. Allow the soup to simmer for a few minutes to deepen the curry flavors.
- Serve with Lime: Ladle the soup into bowls and serve with extra lime wedges for squeezing, adding a fresh and zesty brightness to each serving.
