Salad
- 1 lb Fusilli Noodles
- 1 cup Mayonnaise (Duke's is best)
- 1 teaspoon Dijon Mustard
- 1 large Garlic Clove, grated
- 2 tablespoons Apple Cider Vinegar
- 3 tablespoons Fresh Dill, roughly chopped and packed
- 1 teaspoon White Sugar
- 3 tablespoons Sweet Pickle Relish
- 1 (8 oz) block Havarti cheese (such as Roth), cut into cubes
- 2 cups Dill Pickles, chopped
- 2 tablespoons Pickle Juice (or more, to taste)
- Kosher Salt, to taste
- Fresh Cracked Black Pepper, to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the fusilli according to the package directions until al dente. Drain, rinse thoroughly with cold water to stop cooking and cool the noodles, then set aside to cool completely.
- Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, grated garlic, apple cider vinegar, chopped fresh dill, sweet pickle relish, white sugar, two generous pinches of kosher salt, and several cracks of black pepper until the mixture is smooth and creamy.
- Combine Pasta and Pickles: Add the cooled fusilli pasta and chopped dill pickles into the bowl with the dressing. Gently fold everything together with a spatula or large spoon until the noodles are evenly coated with the dressing.
- Adjust Consistency: Pour in the pickle juice gradually to loosen the dressing. Start with 2 tablespoons and add more if needed, based on your preferred level of creaminess and the shape of your pasta.
- Add Cheese & Season: Stir in the cubed Havarti cheese carefully to incorporate it without breaking the cubes. Taste the salad and adjust seasoning with additional kosher salt and freshly cracked black pepper as desired.
- Chill and Serve: Cover the pasta salad with plastic wrap or transfer to a sealed container. Refrigerate until ready to serve to allow flavors to meld, or enjoy immediately if preferred.
Notes
- Using Duke's mayonnaise adds a richer, tangier flavor, but any good-quality mayo will work.
- Rinsing pasta with cold water stops cooking and helps keep the salad from becoming mushy.
- Adjust the amount of pickle juice to reach your desired dressing consistency and tanginess.
- Fresh dill significantly enhances the flavor; dried dill is not recommended as a substitute.
