No reviews

This one-pot goat cheese pasta recipe is a quick and creamy delight perfect for busy weeknights. Bursting with roasted cherry tomatoes, aromatic garlic and onion, tender pasta cooked directly in vegetable stock, and rich goat cheese melted into a luscious sauce, it offers a vibrant combination of fresh flavors with a hint of lemon zest and dill for brightness.

  • Total Time: 21 minutes
  • Yield: 2 servings

Ingredients

Vegetables & Herbs

  • 300g cherry tomatoes
  • 3 garlic cloves, minced
  • 1 white onion, finely diced
  • 1 lemon, zest only
  • 5g fresh dill, finely chopped

Pasta & Dairy

  • 200g pasta (conchiglie or preferred shape)
  • 125g goat cheese (without the rind)

Liquids & Others

  • 500ml vegetable stock (plus extra if needed)
  • Olive oil (for frying)
  • Salt and black pepper (to season)

Instructions

  1. Sauté the tomatoes and aromatics: Heat a deep or large skillet over medium heat and drizzle with olive oil. Add the cherry tomatoes and cook until they start to burst. Then add the minced garlic and diced white onion, stirring and frying for a few minutes until soft and fragrant. Season with salt and pepper to taste.
  2. Add pasta and stock: Pour the uncooked pasta directly into the pan, then pour in the vegetable stock. Stir to combine, ensuring the stock nearly covers the pasta but does not fully submerge it.
  3. Incorporate goat cheese and herbs: Place the goat cheese in the center of the pan and sprinkle the lemon zest and chopped fresh dill over the top. Stir gently to combine as the goat cheese begins to melt and create a creamy sauce.
  4. Cook the pasta: Allow the pasta to cook in the simmering stock and cheese mixture for 10-15 minutes until al-dente. The liquid will gradually reduce and evaporate. Stir every couple of minutes to prevent sticking. Add extra vegetable stock if necessary, especially if the pasta dries out or sticks to the pan bottom.
  5. Finish and serve: Once the pasta is tender and the sauce is glossy and smooth, taste and adjust seasoning with salt and pepper as needed. Serve immediately garnished with more fresh dill for a fresh, herbal finish.

Notes

  • Use any pasta shape you prefer; cooking time may vary slightly depending on shape.
  • Add vegetable stock gradually to control sauce consistency and prevent pasta from drying out.
  • If you prefer a tangier sauce, add a squeeze of fresh lemon juice before serving.
  • For a richer dish, a splash of cream can be stirred in at the end.
  • This recipe is vegetarian and naturally gluten-free if using gluten-free pasta.
