Ingredients
Yeast Dough
- 1 cup whole milk, warm (about 105 - 110°F)
- 2¼ tsp (1 packet) active dry yeast
- 3½ cups all-purpose flour, sifted (plus more for dusting)
- ½ cup granulated sugar
- 1 tsp salt
- ½ (1 stick) cup unsalted butter, softened
- 2 large eggs, room temperature
- 1 cup heavy cream
Cinnamon Sugar Filling
- ½ cup (1 stick) unsalted butter, softened
- 1 cup light brown sugar
- ½ tsp salt
- 2 tbsp ground cinnamon
Cream Cheese Glaze
- ½ cup butter, softened
- 8 oz cream cheese, softened
- 1 cup confectioner's sugar
- 1 tbsp pure vanilla extract
- ¼ tsp salt
- 1 tbsp milk or half & half
Instructions
- Activate Yeast: In a microwave-safe bowl, gently heat the milk until it reaches between 105°F and 110°F, making sure it doesn't get too hot. Stir in the yeast and mix until dissolved. Let the mixture sit for 5 to 10 minutes until it becomes foamy, indicating the yeast is active.
- Make Dough: In a separate bowl, sift together the flour, granulated sugar, and salt. Add these dry ingredients to a stand mixer. Pour in the milk and yeast mixture, add the eggs and vanilla extract. Using a dough hook attachment, mix on low speed until the dough starts to come together, scraping the bowl sides when necessary. Then add the softened butter. Increase the speed to medium and knead the dough for 5 minutes. If you don't have a mixer with a dough hook, knead by hand until smooth and elastic.
- First Rise: Spray a large bowl with non-stick baking spray. Shape the dough into a ball and place it in the bowl. Cover loosely with plastic wrap and set it in a warm place to rise for about 1 hour, or until doubled in size.
- Prepare Filling: While the dough rises, combine the softened butter, light brown sugar, salt, and cinnamon in a medium bowl. Mix thoroughly until smooth and well blended using a hand mixer or spoon. Prepare a 9×13 inch baking dish by spraying it with non-stick spray.
- Shape Rolls: After the dough has risen, turn it out onto a lightly floured surface and punch it down gently. Knead it slightly for 1 to 2 minutes, then roll it out into a large rectangle about ¼ inch thick. Spread the cinnamon sugar filling evenly over the dough. Roll the dough tightly into a log shape from one long edge to the other.
- Cut Rolls: Using a serrated knife, flavorless floss, or fishing line, cut the log into 12 equal pieces or rolls. Arrange these rolls side by side in the prepared baking pan, leaving a little space for rising.
- Second Rise: Cover the rolls tightly with plastic wrap and let them rise in a warm area for 30 to 35 minutes, or until they have doubled in size again.
- Preheat Oven and Bake: Preheat your oven to 375°F (191°C). Once the rolls have doubled, pour 1 cup of heavy cream evenly over them. Bake the cinnamon rolls in the oven for 23 to 25 minutes until they turn golden brown on top.
- Cool and Glaze: Remove the baking pan from the oven and let the rolls cool on a wire rack for about 5 minutes. While they cool, whisk together softened butter, cream cheese, confectioner's sugar, vanilla extract, salt, and milk or half & half until smooth to make the glaze.
- Serve: Spread the cream cheese glaze generously over the warm cinnamon rolls. Serve immediately and enjoy the decadent treat while still warm.
Notes
- The milk temperature for activating yeast should not exceed 110°F to avoid killing the yeast.
- If you don’t have a stand mixer, kneading by hand is perfectly fine but may take longer.
- Make sure the dough rises in a draft-free, warm location for best results.
- Using flavorless floss or fishing line to cut the rolls helps keep the edges neat without squashing the dough.
- You can make the dough or filling ahead of time and refrigerate; just be sure to allow time for proper rising before baking.
- For an extra soft texture, brush the rolls with melted butter after baking before glazing.
