Ingredients
Dry Ingredients
- 1¾ cups all-purpose flour
- 1½ cups granulated sugar
- ½ tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. ginger
- ½ tsp. allspice
- ¼ tsp. cloves
Wet Ingredients
- 1 cup canned pumpkin
- 2 eggs
- ½ cup canola or vegetable oil
- ¼ cup milk
- 1 tsp. vanilla extract
- ¼ tsp. almond extract
Topping
- Turbinado sugar for topping
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Spray a standard-sized loaf pan with nonstick cooking spray to ensure the bread won't stick after baking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, allspice, and cloves. This ensures the spices and leavening agents are evenly distributed.
- Mix Wet Ingredients: In a large bowl, combine the canned pumpkin, eggs, canola or vegetable oil, milk, vanilla extract, and almond extract. Whisk until smooth and well blended.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients bowl, gently mixing until just combined. Avoid overmixing to keep the bread tender.
- Pour Batter and Add Topping: Pour the batter into the prepared loaf pan and sprinkle generously with turbinado sugar for a crunchy, sweet topping.
- Bake the Bread: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the bread cool for 5 to 10 minutes in the pan. Then, remove it from the pan and allow it to cool further before slicing and enjoying.
Notes
- Use canned pumpkin puree, not pumpkin pie filling, for the best texture and flavor.
- Make sure not to overmix the batter to avoid a dense bread.
- If a toothpick does not come out clean when testing at 50 minutes, bake for an additional 5-10 minutes, checking periodically.
- Store pumpkin bread wrapped tightly at room temperature for up to 3 days or refrigerate for up to a week.
- Adding nuts or chocolate chips can be a delicious variation.
