Experience the ultimate comfort food with these ultra creamy cheesy mashed potatoes. Made with Yukon Gold potatoes and a potato ricer for a fluffy texture, they’re loaded with rich butter, creamy milk and cream, and plenty of gooey cheese. Perfect as a savory side dish for any meal.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 2 lb Yukon Gold potatoes

Dairy

  • 1 stick butter (8 tbsp), room temperature
  • 1/4 cup heavy cream, room temperature
  • 3/4 cup milk, room temperature
  • 2-3 cups shredded cheese of choice (freshly shredded is preferable)

Seasoning

  • Salt
  • Freshly ground black pepper

Garnish (Optional)

  • Fresh herbs for plating

Instructions

  1. Prepare the Potatoes: Peel the Yukon Gold potatoes and slice them in half to ensure even cooking.
  2. Boil the Potatoes: Place the potatoes in a large pot and cover them with cold water by about 1 inch. Heavily salt the water so it tastes like the sea. Bring the water to a boil over high heat, then reduce heat to low and simmer until the potatoes are fork-tender but not falling apart, approximately 30 minutes.
  3. Drain and Rice the Potatoes: Drain the cooked potatoes thoroughly. Using a potato ricer, push the hot potatoes directly back into the warm pot to create a fluffy texture.
  4. Add Dairy and Cheese: Add the room temperature milk, heavy cream, butter, and shredded cheese to the riced potatoes. Whisk or stir vigorously until the mixture is smooth and creamy. Add more milk if necessary to reach desired consistency.
  5. Season and Serve: Taste the mashed potatoes and season generously with salt and freshly ground black pepper. Top with extra black pepper and garnish with fresh herbs if desired. Serve immediately for best flavor and texture.

Notes

  • These mashed potatoes can be made a few hours or even days ahead of time. When ready to serve, gently heat them over low heat while stirring constantly, adding extra milk as needed to maintain creaminess.
  • For best results, use freshly shredded cheese rather than pre-shredded.
  • Adjust cheese type and quantity to suit your taste preferences.
  • Yukon Gold potatoes are preferred for their buttery flavor and smooth texture.
  • If you don’t have a potato ricer, a food mill or a masher can be used but results may be less fluffy.
