Ingredients
Meat and Seasoning
- 1 lb. lean ground beef
- 1 (1 ounce) packet taco seasoning mix
Beans and Vegetables
- 1 ½ cups refried beans (or 1 ½ cups drained and rinsed black beans)
- ¾ cup corn kernels
Grains
- 3 cups cooked rice (such as Uncle Ben's microwaveable Ready Rice)
Other
- 6 large (10-inch) flour tortillas (such as Mission brand 'burrito size' tortillas)
- 1 ½ cups shredded cheddar cheese (or Mexican cheese blend)
Optional Garnishes
- Finely diced red onion
- Lettuce
- Diced tomato or salsa
- Sour cream
- Fresh cilantro
- Avocado or guacamole
Instructions
- Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Lightly spray a 9 x 13-inch baking dish with nonstick cooking spray and set aside to keep the burritos from sticking.
- Cook the beef: In a skillet over medium heat, cook the lean ground beef until browned. Drain any excess fat, then stir in the taco seasoning mix and water as directed on the seasoning packet. Cook until the beef is fully seasoned and the mixture is thickened. Remove from heat.
- Assemble the burritos: Lay out a flour tortilla flat and spread ¼ cup of refried beans down the center. Top with ½ cup of cooked rice, a generous portion of the seasoned beef, 2 tablespoons of corn kernels, and ¼ cup of shredded cheese.
- Roll the burritos: Fold in the sides of the tortilla, then roll it up tightly from the bottom to enclose the filling. Place the seam side down in the prepared baking dish. Repeat this process with the remaining tortillas and fillings until all burritos are assembled and arranged in the dish.
- Bake the burritos: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes or until heated through. If baking burritos straight from the refrigerator, extend the baking time by 5 to 10 minutes to ensure they are warmed thoroughly.
Notes
- You can substitute refried beans with black beans if you prefer a chunkier texture.
- For extra flavor, garnish with diced red onion, fresh cilantro, avocado or guacamole, sour cream, and salsa before serving.
- To save time, use microwaveable rice packets such as Uncle Ben's Ready Rice.
- These burritos freeze well; wrap individually and reheat in the oven or microwave.
- Adjust the spiciness by choosing mild or hot taco seasoning according to your preference.
