Ingredients

Whipped Tofu

  • 300 g firm tofu (can use softer tofu for a looser whipped tofu)
  • 1 tbsp lemon juice
  • 1 ½ tsp apple cider vinegar
  • 1 tsp nutritional yeast
  • ½ tsp salt
  • 4 - 6 tbsp soy milk (as needed to blend, omit if using softer tofu)

Instructions

  1. Drain excess liquid. Drain any excess liquid from the package of tofu, but there is no need to press the tofu itself to remove moisture.
  2. Break the tofu. Break the tofu into rough pieces using your hands and transfer them into a blender.
  3. Add flavorings and milk. Add lemon juice, apple cider vinegar, nutritional yeast, and salt to the blender. If using firm tofu, add at least 3 tablespoons of soy milk to aid blending.
  4. Blend until smooth. Blend the tofu mixture until smooth, adding more soy milk as needed to achieve your desired whipped consistency.
  5. Add optional flavorings. Optionally, mix in additional flavorings like garlic, fresh herbs, or chilies to customize the taste.
  6. Refrigerate. Transfer the whipped tofu to an airtight container and refrigerate for 3 to 4 days.
  7. Serve. Serve the whipped tofu slathered on toast, as a dip for crackers, or as you would use another bean dip.

Notes

  • No need to press tofu; draining excess liquid is sufficient.
  • If using softer tofu, you can omit soy milk for blending.
