- 6 eggs
Sauce
- 1½ tablespoons unsalted butter
- ¼ cup garlic, minced
- 2¼ teaspoons Old Bay seasoning
- 3 teaspoons light brown sugar
- ½ heaping teaspoon onion powder
- 1½ teaspoons lemon pepper seasoning
- 1 teaspoon paprika
- ½ - 1 teaspoon red chili flakes, or to taste
- ¾ cup chicken bone or vegetable broth, low sodium
- ¼ lemon, juiced
- Kosher salt, optional (Diamond Crystal brand recommended)
Garnish
- Flat leaf parsley, chopped
Instructions
- Prepare ice bath: Fill a bowl with cold water and ice cubes to create an icy bath. Set aside for later use to cool the eggs quickly.
- Boil eggs: In a medium saucepan, bring enough water to a rolling boil to cover the eggs. Carefully add eggs and boil for 7 minutes for jammy yolks or 7½ minutes for more set yolks. For fully hard-boiled eggs, follow the time guidance above.
- Cool eggs: Remove eggs with a slotted spoon and immediately place them in the ice bath. Keep them submerged for about 2 minutes or until cool enough to handle, stopping the cooking process and making peeling easier.
- Peel eggs: Under slow running water, gently peel the eggs and pat them dry on a paper towel. Set aside for plating.
- Make the sauce – melt butter and cook garlic: In a large skillet over low heat, melt the butter carefully to avoid clarifying it. Add minced garlic and stir continuously for 1 minute to soften and infuse the butter with garlic flavor without burning.
- Add seasonings: Stir in Old Bay seasoning, light brown sugar, onion powder, lemon pepper seasoning, paprika, and red chili flakes. Cook for an additional minute to release the aromas and flavors.
- Add broth and cook sauce: Pour in the chicken bone or vegetable broth and increase heat to medium-high. Let the sauce simmer for 6 minutes until it reduces slightly and thickens.
- Finish the sauce: Stir in lemon juice and a splash of water to balance flavors. Taste and season with kosher salt if needed, remembering that Old Bay and lemon pepper contain salt already.
- Assemble and serve: Place peeled eggs in a serving bowl and pour the warm sauce over them. Garnish with chopped flat leaf parsley. Serve warm, optionally accompanied by crusty ciabatta bread or jasmine rice for a fuller meal.

- Adjust boiling time depending on preferred yolk consistency: 7 minutes for jammy, 7½ minutes for more set.
- Use low heat when melting butter to avoid clarifying or browning it, which changes flavor.
- Old Bay seasoning contains salt, add extra salt cautiously.
