  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Tofu and Eggs

  • 3 tablespoons vegetable oil (divided)
  • 8.8 ounces extra-firm tofu (drained and cut into small cubes)
  • 2 large eggs (beaten)

Vegetables and Aromatics

  • 2 cloves garlic (minced)
  • 1/2-inch knob fresh ginger (peeled and minced)
  • 1/2 cup diced yellow onion
  • 2 large carrots (peeled and chopped small)
  • 2 scallions (thinly sliced, separate white/light green parts from dark green parts)
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas

Rice and Sauce

  • 4 cups cold cooked white or brown rice
  • 2 1/2 tablespoons soy sauce
  • 1 1/2 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • Sriracha (to taste)

Instructions

  1. Cook Tofu: Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat. Add the tofu cubes and cook until they are lightly browned on all sides, about 5-8 minutes. Remove the tofu from the skillet and set aside.
  2. Scramble Eggs: In the same skillet, add another tablespoon of vegetable oil. Pour in the beaten eggs and scramble them until fully cooked, about 2 minutes. Remove the eggs from the skillet and set aside.
  3. Sauté Vegetables: Add the remaining tablespoon of oil to the skillet. Sauté the minced garlic, fresh ginger, diced onion, chopped carrots, and the white and light green parts of the scallions for about 5 minutes, until the carrots are tender but still crisp.
  4. Combine and Stir-Fry: Add the cold cooked rice, frozen corn, frozen peas, browned tofu, and scrambled eggs back into the skillet. Stir well to combine. Mix together the soy sauce, rice vinegar, sesame oil, and sriracha, then pour this sauce over the rice mixture. Cook for another 1-2 minutes, stirring frequently, until everything is heated through and evenly coated.
  5. Garnish and Serve: Remove from heat and garnish the fried rice with the reserved dark green scallion slices. Serve the tofu fried rice hot and enjoy.

Notes

  • Use cold, day-old rice for best texture that prevents clumping.
  • Extra-firm tofu should be well drained and pressed to remove excess moisture before cooking.
  • Sriracha can be adjusted to taste for desired spiciness, or omitted for a milder dish.
  • To make it vegan, omit eggs or substitute with a tofu scramble.
  • Feel free to swap vegetables based on preference or seasonality.
