Ingredients
Pie Crust
- 1 batch of your favourite pie crust pastry
Maple Pie Filling
- 1 1/2 cups pure maple syrup
- 1/2 cup butter
- 1/2 cup whipping (35%) cream
- 2 tsp all-purpose flour
- 1/4 tsp salt
- 2 large eggs
Instructions
- Prepare Pie Crust: Roll out your pie dough and place it evenly into a 9-inch pie plate. Chill the crust in the refrigerator while you prepare the filling to ensure it stays firm during baking.
- Preheat Oven: Set your oven to 325ºF (163ºC) to prepare for baking the pie after the filling is ready.
- Cook Maple Syrup Mixture: In a heavy saucepan over medium heat, bring the pure maple syrup to a gentle boil. Continue cooking for about 5 minutes, reducing the heat if necessary to avoid boiling over.
- Add Butter and Cream: Remove the saucepan from heat and stir in the butter until fully melted. Then stir in the whipping cream, combining everything smoothly.
- Thicken Filling: Transfer about 1/2 cup of the hot syrup mixture to a small bowl. Whisk in the all-purpose flour and salt thoroughly until no lumps remain. Return this mixture back into the saucepan and whisk continuously to combine and slightly cool the filling.
- Incorporate Eggs: Beat the eggs lightly in a separate bowl. Slowly whisk the eggs into the cooled maple mixture in the saucepan, ensuring the eggs don’t cook prematurely by tempering.
- Fill Pie Shell: Pour the smooth maple filling evenly into the chilled pie crust, smoothing the top to prepare for baking.
- Bake the Pie: Place the pie on the middle rack and bake for about 45 minutes, or until the center is golden brown, bubbly, and firm to the touch.
- Cool and Serve: Remove the pie from the oven and allow it to cool completely; the filling will continue to set to a silky texture as it cools. Serve at room temperature or slightly chilled.
Notes
- Using pure maple syrup is essential for authentic flavor; avoid imitation syrups.
- Chilling the pie crust before adding filling helps prevent a soggy bottom.
- Whisk the flour mixture thoroughly to avoid lumps in the filling.
- Be careful when adding eggs to the hot filling to prevent curdling; temper the eggs by adding a little hot mixture first.
