  • Coarse salt, to taste (about ¼ teaspoon per vegetable when seasoning)
  • Fresh cracked black pepper, to taste
  • 1 teaspoon sugar

  • 4 tablespoons olive oil, divided

Instructions

  1. Prepare Vegetables: Dice all vegetables into medium to large pieces to ensure even cooking and texture.
  2. Sear Eggplant: Heat 2 tablespoons olive oil in a large rondeau pot over high heat until it just begins to smoke. Add diced eggplant, season lightly with salt, and sauté for 90 seconds until one or two sides brown. Remove and set aside in a single layer to cool slightly.
  3. Sear Zucchini: Add 1 tablespoon olive oil to the pot and heat until smoking. Add zucchini, season with salt, and sauté for 2 minutes until one or two sides brown. Remove and set aside separately in a single layer to cool.
  4. Cook Onions: Add remaining 1 tablespoon olive oil over medium heat. Add diced onions, season with salt, and sauté for 4 to 5 minutes until they start to brown. Reduce heat to low and continue cooking for 10 minutes until onions are deeply browned and tender.
  5. Add Bell Peppers: Turn heat to medium. Add red and green bell peppers and cook, stirring, for 5 minutes until softened.
  6. Cook Garlic: Stir in garlic slices and cook for 2 to 3 minutes until fragrant but not browned.
  7. Add Tomatoes and Herbs: Add diced tomatoes, sugar, parsley stems and leaves, thyme sprigs, salt, and pepper. Stir well, cover with a lid, and simmer over low to medium heat for 10 to 12 minutes until the tomatoes break down and form a thick sauce.
  8. Combine Vegetables: Return the seared eggplant and zucchini to the pot. Cook over low to medium heat, stirring occasionally, for 5 to 6 minutes to meld flavors.
  9. Finish and Serve: Remove and discard parsley and thyme stems. Adjust seasoning with salt and pepper. Optionally garnish with fresh thyme leaves and crushed red pepper flakes before serving.

  • Searing each vegetable separately preserves texture and enriches flavor, preventing the dish from becoming mushy.
