- 3 medium Yukon gold potatoes, cubed
- 2 cans tuna, drained

Instructions
- Cook the Potatoes: Bring a medium pot of well-salted water to a boil. Add the cubed Yukon gold potatoes and cook until tender, about 12 to 15 minutes. Once cooked, drain the potatoes and set them aside to cool completely to room temperature.
- Prepare the Tuna Mixture: Once the potatoes have cooled, transfer them to a large bowl. Add the drained tuna and, using a fork, gently mash the tuna to break up any large pieces. Stir in the juice of half a lemon, a pinch of kosher salt, and several grinds of freshly ground black pepper to season and combine the flavors.
- Combine Salad Ingredients: Add the mayonnaise, diced celery, finely chopped yellow onion, chopped Italian parsley, and thawed, drained peas to the bowl. Gently fold all the ingredients together with the cooled potatoes and tuna, mixing just until everything is evenly combined. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
- Serve or Store: Serve the salad immediately for the freshest flavor or refrigerate it in an airtight container. The salad will keep well in the refrigerator for up to 5 days, making it a convenient option for meal prep.
