These Turkey Hand Pies are a delightful handheld meal perfect for using up leftover turkey. Made with flaky puff pastry filled with mashed potatoes, shredded Gruyère cheese, turkey, and a touch of cranberry sauce, they combine savory and slightly sweet flavors for a comforting bite. Baked until golden and topped with minced onion and flaky salt, these pies are ideal for a quick lunch, appetizer, or snack.

  • Total Time: 28 minutes
  • Yield: 4 servings (8 hand pies)

Ingredients

Puff Pastry and Egg Wash

  • 2 sheets frozen puff pastry, thawed in the refrigerator
  • 1 large egg
  • 2 tablespoons cold water
  • 2 tablespoons Dijon mustard

Filling

  • 1 cup mashed potatoes
  • 1½ cups shredded Gruyère cheese (about 6 ounces)
  • 2 cups shredded turkey
  • ½ cup cranberry sauce
  • 1 tablespoon minced onion
  • Flaky salt, to taste

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and position a rack in the center. Line a rimmed sheet pan with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the puff pastry: Thaw the puff pastry sheets in the refrigerator beforehand. Once thawed, cut each sheet into 4 equal squares, giving you 8 squares total to work with.
  3. Make the egg wash and apply the mustard: In a small bowl, beat together the egg and 2 tablespoons of cold water to create the egg wash. Using a pastry brush, lightly brush a ½-inch border around the edges of each pastry square. Then spread Dijon mustard evenly onto each square, careful not to cover the brushed border, which will help seal the pies.
  4. Assemble the hand pies: On one half of each pastry square, layer 2 tablespoons of mashed potatoes, 3 tablespoons of shredded Gruyère cheese, ¼ cup of shredded turkey, and 1 tablespoon of cranberry sauce. Fold the other half of the pastry over the filling and press the edges firmly together to seal, creating a neat hand pie.
  5. Brush and add toppings: Arrange the sealed hand pies on your prepared sheet pan. Brush the tops with the remaining egg wash for a golden finish. Sprinkle each pie with minced onion and flaky salt to add flavor and texture.
  6. Bake: Place the sheet pan in the preheated oven and bake for 15 to 18 minutes, or until the puff pastry is puffed up and beautifully golden brown.
  7. Cool and serve: Remove the hand pies from the oven and let them cool for a few minutes to firm up. Serve warm for the best taste and texture.

Notes

  • You can substitute Gruyère with Swiss or mozzarella cheese if preferred.
  • Make sure the puff pastry is fully thawed before handling to prevent tearing.
  • Feel free to use leftover turkey or cooked turkey breast for convenience.
  • For easier sealing, press the edges of the pastry with a fork after folding.
  • Serve these hand pies with extra cranberry sauce for dipping if desired.
