Soup Base
- 1 tablespoon extra-virgin olive oil or unsalted butter
- 1 yellow onion, chopped (about ¾ cup)
- 2 ribs of celery, ½-inch chopped
- 1-2 large carrots, peeled and ¼-inch sliced (about 1 ½ cups)
- 4 cloves garlic, minced
- 8 cups turkey stock or chicken stock
- 2 bay leaves
Main Ingredients
- 2-3 cups cooked shredded turkey
- 8 ounces egg noodles or your favorite dried noodles
Seasonings
- 1 tablespoon minced flat-leaf parsley
- 1 teaspoon sea salt
- ¼ teaspoon fresh cracked black pepper, plus more to taste
Instructions
- Sauté Vegetables: In a large soup pot or Dutch oven, heat the olive oil or butter over medium heat until shimmering. Add the chopped onion, celery, and carrots, and cook while stirring frequently until the onions become translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add Stock and Simmer: Pour in the turkey or chicken stock and add the bay leaves. Bring the mixture to a boil over high heat, then reduce the heat to medium. Let the soup simmer uncovered until the vegetables are nearly tender, approximately 10 minutes.
- Add Turkey and Noodles: Stir in the shredded turkey, egg noodles, minced parsley, sea salt, and black pepper. Bring the soup back to a vigorous simmer, cover with a lid, and maintain a gentle boil. Stir occasionally and cook until the noodles are tender and the turkey is heated through, about 10 minutes.
- Serve: Remove from heat, discard the bay leaves, and ladle the soup into bowls. Garnish with freshly cracked black pepper to taste and serve warm.
Notes
- For best flavor, use homemade turkey stock made from leftover turkey bones, but store-bought chicken or turkey broth works well.
- If you prefer a thicker soup, reduce the amount of stock or cook uncovered a bit longer after adding the noodles.
- Fresh egg noodles can be substituted for dried, adjusting the cooking time accordingly (usually less).
- Add other vegetables such as peas or spinach towards the end if desired for added nutrition and color.
