Ingredients
Beef and Vegetables
- 2 pounds chuck roast (cut into 2 inch cubes)
- 1 onion (sliced)
- 1 red bell pepper (sliced)
- 3 anaheim peppers (sliced)
- 1 cup cherry tomatoes
- 8 garlic cloves (sliced)
- 6 sprigs thyme
Liquid and Seasonings
- 4 cups water
- 1/4 cup tomato paste
- 1/4 cup red wine vinegar
- 1 tablespoon granulated sugar
- 1 tablespoon cumin
- 1 tablespoon Aleppo pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven: Set your oven to 325 degrees F to prepare for slow braising.
- Prepare the beef and vegetables: Place the cubed chuck roast in the bottom of a Dutch oven and season with salt and pepper. Layer the sliced onion, red and anaheim peppers, cherry tomatoes, garlic, and thyme sprigs evenly on top of the beef.
- Mix the braising liquid: In a bowl, whisk together the water, tomato paste, red wine vinegar, granulated sugar, cumin, Aleppo pepper, salt, and black pepper until fully combined. Pour this mixture over the beef and vegetables in the Dutch oven.
- Start braising: Cover the Dutch oven with its lid and place it on the stovetop over high heat to bring the liquid to a boil.
- Transfer to the oven: Once boiling, transfer the covered Dutch oven to the preheated oven and braise the beef for 2 hours, allowing the meat to tenderize and flavors to meld.
- Reduce the sauce and finish braising: Remove the lid and increase the oven temperature to 425 degrees F. Continue braising uncovered for an additional 30 minutes to reduce and thicken the braising liquid.
- Season and serve: Remove the Dutch oven from the oven. Taste and adjust seasoning with additional salt and pepper if needed. Serve the Turkish style braised beef warm, ideally accompanied by rice or crusty bread to soak up the delicious sauce.
Notes
- Using a Dutch oven is essential for even heat distribution during braising.
- For a spicier kick, increase the amount of Aleppo pepper or add chili flakes.
- Let the beef rest for 10 minutes after cooking to allow juices to redistribute.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To save time, you can prepare the braising liquid the night before.
