- 1/2 cup whole rolled oats

- 3/4 teaspoon ube extract

Instructions
- Combine Base Ingredients: In a bowl or a mason jar, add the whole rolled oats, coconut milk, plain Greek yogurt, honey, and ube extract. Stir thoroughly to ensure all ingredients are well combined and the ube extract is evenly distributed.
- Refrigerate Overnight: Cover the mixture securely with a lid or plastic wrap and place it in the refrigerator for at least 8 hours, preferably overnight. This resting period allows the oats to absorb the liquids, soften, and thicken into a creamy consistency.
- Toast Coconut Flakes: While the oats are soaking, heat a small dry pan over medium heat. Add the unsweetened coconut flakes and toast them, stirring frequently until they turn a golden brown color. Remove from heat and set aside to cool.
- Assemble and Serve: After the oats have fully soaked, remove them from the refrigerator. Top the creamy ube oats with the toasted coconut flakes, diced strawberries, and sliced bananas. Finally, drizzle a generous amount of condensed milk on top according to your taste preference. Serve immediately and enjoy!
Notes
- Coconut milk used for drinking (typically sold in cartons) works best, as canned coconut milk tends to be too thick and rich for this recipe.
- Ube extract can be found in most Filipino stores or in the international aisle of some Western grocery stores. Alternatively, ube halaya (ube jam) can be used, but reduce/remove the honey as these jams are already sweetened.
- For a thicker, more gelatinous texture, you may add 1 tablespoon of chia seeds to the oats before refrigeration.
- Feel free to adjust the amount of coconut milk if the mixture is too thick to your liking.
