Delightfully light and fluffy Vanilla Fairy Cakes, perfect for a sweet treat or party dessert. These classic cupcakes are easy to make with simple ingredients and a moist texture, topped with your favorite icing and decorations.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Dry Ingredients

  • 3/4 Cup Plain Flour
  • 1/2 Cup Sugar
  • 2 Tsp Baking Powder

Wet Ingredients

  • 4 Tbsp Sunflower Oil
  • 4 Tsp Milk
  • 2 Eggs
  • 1 Tsp Vanilla Extract

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, combine the plain flour, sugar, and baking powder thoroughly to ensure an even distribution of the leavening agent.
  2. Add Wet Ingredients: Gradually add the sunflower oil, milk, vanilla extract, and eggs to the dry mixture, mixing well between each addition. Make sure the batter is smooth and all ingredients are fully incorporated.
  3. Prepare Oven and Tray: Preheat your oven to 200°C (390°F). Line a muffin tray with paper cups or alternatively grease the tray lightly to prevent sticking.
  4. Fill Moulds: Pour the batter into the muffin cups, filling each about three-quarters full to allow room for rising during baking.
  5. Bake: Place the tray in the oven and bake for approximately 20 minutes. Check doneness by inserting a wooden skewer into the center of a cake; it should come out clean or with just a few crumbs attached.
  6. Cool: Remove the cakes from the oven and let them cool completely on a wire rack to avoid sogginess.
  7. Decorate: Once cooled, ice and decorate the fairy cakes as desired to add a personal and festive touch.

Notes

  • Ensure not to overmix the batter to keep the cakes light and fluffy.
  • Use room temperature eggs for better mixing and texture.
  • Test the cakes a few minutes before the suggested baking time as ovens may vary.
  • For a dairy-free option, substitute milk with almond or soy milk and ensure the icing is also dairy-free.
  • Allow cakes to cool completely before icing to prevent melting.
