A silky and creamy Italian dessert made with gelatin, cream, and vanilla, served chilled with a fresh berry coulis. This Panna Cotta recipe offers a perfect balance of sweetness and smooth texture, topped with a vibrant, homemade berry sauce that brings a refreshing fruitiness to every bite.

  • Total Time: 5 hours 30 minutes
  • Yield: 6 servings

Ingredients

Panna Cotta

  • 1 Tbsp gelatine powder
  • 3 Tbsp cold water
  • 1 cup milk
  • 2 tsp vanilla extract, or 1 vanilla pod
  • ⅓ cup white sugar
  • 2 cups cream
  • Fresh berries to serve (optional)

Berry Coulis

  • 1 ½ cups strawberries or frozen berries
  • 3 Tbsp sugar

Instructions

  1. Prepare Glasses: Place 6 glasses in the fridge to chill while preparing the panna cotta, ensuring the dessert sets perfectly in cold containers.
  2. Bloom Gelatine: In a small bowl, combine the gelatine powder and cold water. Set aside for a few minutes to allow the gelatine to swell and soften.
  3. Heat Milk Mixture: Add milk, vanilla extract (or split vanilla pod), and sugar to a small saucepan. Heat over medium heat, stirring to melt the sugar and infuse the vanilla flavor. Remove from heat just before it starts to simmer to avoid boiling.
  4. Dissolve Gelatine and Mix Cream: Stir the bloomed gelatine into the warm milk mixture until fully dissolved. Slowly pour in the cold cream while stirring gently to create a smooth mixture. Let the mixture cool for about 5 minutes to prevent separation when pouring into glasses.
  5. Set Panna Cotta: Pour the mixture evenly into the chilled glasses. Refrigerate for at least 5 hours or preferably overnight, until fully set and firm to the touch.
  6. Make Berry Coulis: In a small pot, combine the frozen berries and sugar. Bring to a gentle simmer, cooking for about 5 minutes to soften the berries and thicken the syrup slightly. Remove from heat and allow to cool completely, then refrigerate until ready to use.
  7. Serve: Once the panna cotta has fully set, spoon a portion of the chilled berry coulis over the top of each glass. Garnish with fresh berries on the side if desired, and serve cold for a refreshing dessert experience.

Notes

  • Ensure the milk mixture does not boil to avoid curdling the cream.
  • Use fresh or frozen berries interchangeably for the coulis based on availability.
  • For a stronger vanilla flavor, use a whole vanilla pod instead of extract.
  • Allow sufficient chilling time for the pannacotta to set properly; overnight is ideal.
  • The berry coulis can be prepared a day in advance and kept refrigerated.
