Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it reaches the correct temperature by the time your dough is ready for baking.
- Mix Ingredients: In a food processor, combine the butter, caster sugar, and vanilla extract. Process until the mixture is smooth and creamy, ensuring the sugar is well incorporated with the butter.
- Add Dry Ingredients and Eggs: Add the cake or all-purpose flour, along with the egg and egg yolk into the food processor. Pulse until the mixture forms a soft dough, but be careful not to over-process.
- Knead Dough and Chill: Remove the dough from the processor and lightly knead it to bring it into a cohesive ball. Wrap the dough tightly in cling film and refrigerate for 30 minutes to firm up, which helps with rolling and cutting.
- Roll Out Dough: On a lightly floured surface or between two sheets of baking paper, roll the chilled dough to about 5mm (½ cm) thickness. This thickness ensures a snappy biscuit texture once baked.
- Cut Shapes: Use cookie cutters or a round cutter about 7cm in diameter to cut the dough into evenly sized shapes. Consistency in size allows for even baking.
- Arrange on Baking Tray: Place the cut dough pieces on a baking sheet lined with baking paper or a silicone baking mat, leaving some space between each biscuit for even cooking.
- Bake Biscuits: Bake in the preheated oven for 10 to 12 minutes. Start checking at 10 minutes to avoid over-browning. Rotate the baking tray halfway through the baking time to ensure even coloring.
- Cool Biscuits: Carefully transfer the baked biscuits onto a wire cooling rack immediately after removing them from the oven. This prevents carry-over cooking and keeps them from becoming too brown.
