A vibrant and refreshing Vegan Greek Salad featuring crisp cucumbers, ripe tomatoes, colorful bell peppers, tangy kalamata olives, and plant-based feta cheese, all tossed in a zesty homemade dressing with olive oil, lemon, and herbs. This quick and easy salad is perfect for a light lunch or as a flavorful side dish.

  • Total Time: 15 minutes
  • Yield: 6 servings

Ingredients

Salad Ingredients

  • 1 English cucumber
  • 300g / 10.5 oz good quality tomatoes (large or cherry)
  • 1 green or red bell pepper
  • 1 medium red onion
  • 15 kalamata olives
  • 200g / 7 oz block vegan feta

Dressing Ingredients

  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1/4 tsp dijon mustard
  • 1/4 tsp maple syrup
  • 1/4 tsp salt
  • Cracked black pepper, to taste

Instructions

  1. Prepare the cucumber: Peel half of the cucumber skin in alternating stripes or peel it fully or leave it unpeeled, depending on preference. Cut the cucumber in half lengthwise, then slice into semicircles.
  2. Prepare the tomatoes: If using large tomatoes, cut them into wedges. For smaller tomatoes, halve them.
  3. Dice the bell pepper and slice the onion: Chop the bell pepper into small pieces and thinly slice the red onion. You may leave the kalamata olives whole or cut them in half.
  4. Cube the vegan feta: Cut the block of vegan feta into 5 long strips, then cut each strip into 5 cubes.
  5. Combine salad ingredients: Place all the prepared cucumber, tomatoes, bell pepper, onion, olives, and feta into a large bowl.
  6. Make the dressing: In a separate bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, dijon mustard, maple syrup, salt, and cracked black pepper until well combined.
  7. Toss the salad: Drizzle the dressing over the salad ingredients and use salad tongs to toss everything together thoroughly. Garnish with extra dried oregano on top and serve immediately.

Notes

  • You can customize the level of peeling on the cucumber to your texture preference.
  • Feel free to use a mix of tomato varieties for added flavor and color.
  • This salad is best served fresh to enjoy the crisp textures and vibrant flavors.
  • For added crunch, consider topping with toasted pine nuts or sunflower seeds.
  • Leftovers can be stored covered in the refrigerator for up to 1 day but may become soggy.
