Ingredients
For the Doughnuts
- 2 cups all-purpose flour
- ¾ cup organic granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup unflavored and unsweetened non-dairy milk
- ¼ cup freshly squeezed lemon juice
- ¼ cup vegetable oil
- 2 teaspoons lemon zest
- 1 teaspoon lemon extract
- 2 drops natural yellow food coloring (optional, or a pinch of turmeric for color)
For the Glaze
- 1 ½ cups organic powdered sugar
- 3 tablespoons freshly squeezed lemon juice
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (177°C) and lightly oil a 12-cavity doughnut pan, or two 6-cavity pans, to ensure the doughnuts don’t stick.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
- Combine Wet Ingredients: In a separate small container, stir together the non-dairy milk, freshly squeezed lemon juice, vegetable oil, lemon zest, lemon extract, and optional yellow food coloring or turmeric until well mixed.
- Make the Batter: Pour the wet ingredients into the bowl with the dry ingredients and gently stir just until fully combined. Avoid overmixing to keep the doughnuts tender and fluffy.
- Fill the Doughnut Mold: Spoon or pipe the batter into the prepared doughnut cavities, filling each just below the rim to allow for rising during baking.
- Bake: Place the pan(s) in the oven and bake for 12 minutes, until the doughnuts are puffy and lightly browned around the edges.
- Cool Doughnuts: Remove from the oven and place the pan on a cooling rack. Let the doughnuts cool completely before glazing.
- Prepare the Glaze: In a small bowl, whisk together the powdered sugar and freshly squeezed lemon juice until smooth. Adjust the consistency by adding more powdered sugar if too thin, or more lemon juice (or water) if too thick.
- Glaze the Doughnuts: Dip the top of each cooled doughnut into the lemon glaze, then place on parchment paper to set the glaze.
- Serve: Once the glaze has set, serve your freshly baked vegan lemon doughnuts and enjoy!
Notes
- Use a non-dairy milk such as almond, soy, or oat milk to maintain the vegan nature of the recipe.
- The natural yellow food coloring is optional—turmeric is a great natural alternative for color without affecting flavor.
- Do not overmix the batter to ensure light and fluffy doughnuts.
- Dipping the doughnuts while completely cool prevents the glaze from melting off.
- Store doughnuts in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
