  • 4 large eggs
  • ¼ teaspoon sea salt, plus more to taste

  • 3 ounces spinach
  • 4 English muffins, halved and toasted
  • 4 tomato slices
  • Thinly sliced red onion (quantity as desired)
  • Avocado slices, optional
  • Microgreens or sunflower sprouts, optional

Instructions

  1. Make the goat cheese spread: In a small bowl, stir together the goat cheese, chopped fresh chives, extra-virgin olive oil, grated garlic, and onion powder until the mixture is smooth and well combined. Set aside while preparing the eggs.
  2. Prepare the eggs: In a medium bowl, whisk together the eggs and ¼ teaspoon sea salt until fully blended.
  3. Cook the spinach: Heat 2 teaspoons of extra-virgin olive oil in a large nonstick skillet over medium heat. Add the spinach and a pinch of salt, tossing occasionally, until the spinach is just wilted, about 1-2 minutes.
  4. Make the omelet: Spread the wilted spinach evenly across the bottom of the pan and reduce heat to medium-low. Pour in beaten eggs and cook without stirring until the edges start to set, approximately 30 seconds. Gently run a spatula around the edges, tilting the pan so uncooked egg runs underneath. Repeat this technique until the eggs are mostly set, then fold the omelet into thirds, forming a long rectangular shape. Cook for another 30 seconds or until fully set. Remove from the pan and slice crosswise into four rectangular pieces.
  5. Assemble the sandwiches: Spread the goat cheese mixture generously on each half of the toasted English muffins. On the bottom halves, place one omelet slice, followed by a slice of tomato, thinly sliced red onion, avocado slices (if using), and microgreens or sunflower sprouts (if using). Close the sandwiches with the top muffin halves.
