Ingredients
Blueberry and Raspberry Sauce
- 1 cup Fresh raspberries
- 1 cup Fresh blueberries
- 1/2 cup Water, divided
- 6 tablespoons Granulated sugar, divided
- 1 tablespoon Cornstarch
Crust
- 1 1/2 cups Finely ground graham crackers
- 1/3 cup Granulated sugar
- 6 tablespoons Unsalted butter, melted
- 1/2 teaspoon Ground cinnamon
Filling
- 8 oz Cream cheese
- 1/3 cup Granulated sugar
- 1 cup Heavy whipping cream
- 1 can (14 oz) Sweetened condensed milk
- 1 teaspoon Vanilla extract
Instructions
- Prepare Blueberry and Raspberry Sauce: In two separate small pans, combine blueberries with 1/4 cup water, 3 tablespoons sugar, and 1/2 tablespoon cornstarch in one, and raspberries with the same ingredients in the other. Heat both over medium heat, stirring occasionally, for 4-5 minutes until thickened. Allow to cool at room temperature for 15 minutes. Strain the raspberry sauce through a fine mesh strainer to remove seeds, then refrigerate both sauces for at least one hour.
- Prepare Graham Cracker Pie Crust: Preheat the oven to 375°F. In a medium bowl, mix graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon until combined. Press the mixture evenly into the bottom and sides of a 9-inch pie plate. Bake for 7 minutes. Let the crust cool at room temperature for 15 minutes, then chill in the refrigerator until completely cooled.
- Prepare the Filling: In a large bowl, beat the cream cheese and sugar together until creamy and smooth. Add the sweetened condensed milk, heavy whipping cream, and vanilla extract. Continue beating until the filling is smooth and well combined.
- Assemble the Pie: Remove the chilled pie crust and sauces from the fridge. Pour half of the filling into the pie crust. Spoon half of each berry sauce over the filling, then use a knife to gently swirl the sauces into the filling. Repeat by adding the remaining filling and sauces, swirling again. Smooth the top layer as desired.
- Freeze and Serve: Place the assembled pie in the freezer for at least 6 hours or until firm. Before serving, remove from the freezer and let sit at room temperature for 15-20 minutes to soften slightly for easier slicing. Optionally, garnish with fresh berries and whipped cream.
