Instructions
- Caramelize Onions: Add the salted butter to a heavy-bottomed skillet or braiser over medium heat. Once melted, add the thinly sliced onions, olive oil, and a hefty pinch of salt. Cook for about 20 minutes, stirring often, until the onions are soft and beginning to brown.
- Sauté Garlic and Thyme: Add the minced garlic and dried thyme to the caramelized onions. Cook for an additional 3 minutes until the garlic is tender and fragrant, being careful not to burn the garlic.
- Deglaze the Pan: Pour in the balsamic vinegar and dry white wine to deglaze the pan, scraping up all the flavorful browned bits stuck to the bottom of the pan with a wooden spoon or spatula.
- Add Pasta and Broth: Add the uncooked rigatoni pasta, Worcestershire sauce, and beef broth to the pan. Stir well to combine, making sure the pasta is submerged in the liquid.
- Simmer Pasta: Cover the pan with a lid and cook over a medium simmer for about 20 minutes. Remove the lid occasionally to stir and prevent the noodles from sticking. The liquid should absorb into the pasta; if the sauce remains too watery after the pasta is al dente, leave the lid off and simmer a few more minutes until thickened.
- Add Cheese and Cream: Once the pasta is cooked through and the sauce has thickened, stir in the shredded Gruyère cheese and heavy cream gently until the sauce becomes creamy and smooth.
- Season and Serve: Taste the pasta and season with flaky salt and freshly ground black pepper as desired. Serve immediately while warm and creamy.

- Patience is key when caramelizing the onions to develop deep flavor and sweetness.
