Ingredients

Roasted Garlic and Tomatoes

  • 1 head garlic
  • ¼ cup + 2 tablespoons extra virgin olive oil (divided)
  • 3 sprigs fresh thyme
  • 12 ounce package (about 2 cups) heirloom cherry tomatoes

Whipped Feta Spread

  • 8 ounces feta cheese
  • ¼ cup whole milk Greek yogurt
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • pinch of red pepper flakes (optional)

To Serve

  • 1 package Pita Pocket Thins (cut into bite-sized triangles)

Instructions

  1. Preheat and Prepare Roasted Garlic Pouch: Preheat the oven to 350°F and line a baking sheet with foil. Place a smaller sheet of foil on top to create a pouch for the garlic. Remove the top of the garlic head to expose the cloves, place it on the foil, and drizzle with ¼ cup of extra virgin olive oil. Fold up the foil to create a sealed pouch and place it in the oven to roast for 20 minutes.
  2. Broil Tomatoes and Garlic: After the garlic is roasted, set the oven to broil on high. Carefully open the foil pouch using tongs to avoid hot oil. Transfer the roasted garlic, along with the oil, to the foil-lined baking sheet with the cherry tomatoes. Toss the tomatoes lightly in the oil, season with a sprinkle of salt, add fresh thyme sprigs and optional red pepper flakes. Spoon extra oil over the garlic head. Place the tray under the broiler for 8 to 10 minutes until the tomatoes blister and the garlic softens and browns slightly.
  3. Prepare Whipped Feta: While the tomatoes broil, combine feta, Greek yogurt, 2 tablespoons of olive oil, and a pinch of black pepper in a food processor. Pulse about 10 to 12 times, then blend on low speed for 10 seconds until the mixture is smooth and creamy.
  4. Assemble and Serve: Spread the whipped feta evenly on a serving plate. Spoon the blistered tomatoes and about ¾ of the roasted garlic oil over the top. Finish by sprinkling the tomatoes with flaked sea salt and freshly cracked black pepper. Slice pita pocket thins into 8 triangles per pita and serve alongside the whipped feta for dipping.

Notes

  • This recipe can easily be made in a toaster oven with bake and broil functions.
  • If your oven does not have a broil setting, increase baking temperature to 425°F and cook a few extra minutes to blister the tomatoes.
  • If preparing ahead, store the whipped feta in the refrigerator and keep the tomatoes and oil at room temperature to retain their texture and flavor. Add the tomatoes on top of the feta just before serving.
