Whipped Ricotta Crostini with Walnuts & Salted Honey is a delightful appetizer that combines creamy, lemon-zested ricotta cheese whipped to perfection, crisp toasted baguette slices, toasted walnuts, fresh thyme, and a drizzle of sweet, salted honey. This elegant yet simple starter is perfect for parties or a sophisticated snack.

  • Total Time: 27 minutes
  • Yield: 35 servings

Ingredients

Whipped Ricotta

  • 1 pound whole milk ricotta
  • Zest of ½ - 1 lemon (to taste)
  • Fine kosher salt (about 1 teaspoon, to taste)

Crostini

  • 1 baguette (or focaccia), sliced into bite-sized rounds
  • 2 Tablespoons olive oil

Toppings

  • ½ cup walnuts, chopped
  • ¼ cup honey
  • 3 - 4 sprigs fresh thyme
  • Flaky finishing salt (to taste)

Instructions

  1. Preheat the Oven: Arrange a rack in the center third of the oven and preheat to 400° Fahrenheit (205° Celsius) to prepare for toasting the crostini and walnuts.
  2. Prepare Whipped Ricotta: In a food processor fitted with a blade attachment, combine the ricotta cheese, lemon zest, and kosher salt. Process on high speed for 1 minute until the mixture is smooth and creamy. Transfer the whipped ricotta to a piping bag fitted with a petal decorating tip if desired. Refrigerate until ready to assemble the crostini.
  3. Toast the Crostini: Arrange the sliced baguette or focaccia on a baking sheet. Lightly brush the tops of each slice with olive oil using a pastry brush. Toast in the preheated oven for about 7 minutes or until the edges are lightly golden and crisp.
  4. Toast the Walnuts: Spread the chopped walnuts on a baking sheet or oven-safe pan and toast in the same oven for about 5 minutes or until they become golden and aromatic. Keep an eye on them to avoid burning.
  5. Assemble the Crostini: Just before serving, pipe or spread a generous portion of whipped ricotta on each crostini. Top with a sprinkle of toasted walnuts, fresh thyme leaves, and a drizzle of honey. Finish each with a pinch of flaky sea salt to enhance the flavors.

Notes

  • The whipped ricotta can be prepared ahead and refrigerated for up to 24 hours.
  • Use fresh lemon zest for the best flavor; adjust quantity to your taste preference.
  • For a nut-free version, omit the walnuts and add extra herbs or seeds instead.
  • Flaky finishing salt enhances the texture and flavor but can be substituted with regular sea salt if unavailable.
  • Serve crostini immediately after assembly to maintain crispiness.
