Delight in the rich and buttery White Chocolate and Strawberry Blondie, a luscious treat combining creamy white chocolate with juicy fresh strawberries baked into a soft, chewy blondie. Perfect for dessert or an indulgent snack, this recipe yields 16 generous squares bursting with fruity sweetness and smooth white chocolate flavor.

  • Total Time: 1 hour
  • Yield: 16 servings

Ingredients

Blondie Base

  • 100g butter
  • 190g white chocolate (divided)
  • ½ cup caster sugar
  • 1 cup plain flour
  • 1 tsp baking powder
  • 2 eggs, lightly whisked

Fruit and Topping

  • 200g fresh strawberries
  • 1 tsp icing sugar (for dusting)

Instructions

  1. Preheat and Prepare: Preheat your oven to 160°C using the fan bake setting. Line a 20cm square baking tin with baking paper to prevent sticking and make removal easier.
  2. Melt Butter and White Chocolate: In a saucepan over low heat, gently melt 100g of the white chocolate together with the butter. Stir carefully and keep the heat low to avoid the mixture splitting.
  3. Combine Ingredients: Remove the mixture from heat, then stir in the caster sugar until smooth. Sift in the plain flour and baking powder for even distribution. Chop the remaining 90g of white chocolate into small pieces and add to the saucepan along with the whisked eggs. Mix thoroughly until all ingredients are combined into a batter.
  4. Add Strawberries: Trim the stems off the fresh strawberries and slice them into bite-size pieces. Gently fold the strawberries into the blondie batter ensuring even distribution without breaking down the fruit.
  5. Bake: Pour the batter into the prepared baking tin and spread evenly to the edges. Bake in the preheated oven for 40 minutes or until the surface feels firm to the touch and a skewer inserted in the center comes out mostly clean with slight moist crumbs.
  6. Cool and Serve: Allow the blondie to cool completely in the tin. Once cooled, dust the top with icing sugar and cut into 16 squares before serving.

Notes

  • Ensure gentle heat when melting chocolate and butter to prevent texture problems.
  • Use fresh ripe strawberries for the best flavor and texture contrast.
  • Cool the blondie completely before slicing to prevent crumbling.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • For an extra indulgence, serve with a dollop of whipped cream or a scoop of vanilla ice cream.
