This delectable White Chocolate Berry Tart features a crisp biscuit base topped with a luscious berry filling and a silky smooth white chocolate ganache. Finished with fresh and freeze-dried berries and grated chocolate, it’s a perfect festive dessert that combines sweet, tart, and creamy flavors in every bite.

  • Total Time: 3 hours 35 minutes (includes chilling time)
  • Yield: 8 servings

Ingredients

Biscuit Base

  • 300 g digestives
  • 150 g unsalted butter

Berry Mix

  • 300 g berries (frozen berry mix recommended)
  • 100 g caster sugar
  • 1 tbsp cornflour
  • 100 ml water

White Chocolate Ganache

  • 300 g white chocolate
  • 100 ml double cream
  • 50 g unsalted butter

Decoration

  • Fresh berries
  • Freeze-dried raspberries
  • Grated chocolate

Instructions

  1. Prepare Biscuit Base: Blitz the digestives to a fine crumb using a food processor or bash them in a bag with a rolling pin. Melt the unsalted butter in a separate bowl.
  2. Form the Base: Mix the biscuit crumbs with some of the melted butter until combined. Press this mixture evenly into the base and up the sides of a 9-inch tart tin to form a firm crust.
  3. Cook Berry Filling: In a pan, combine the mixed berries, caster sugar, cornflour, and water. Heat on low-medium heat for 5 to 10 minutes, stirring occasionally, until the fruit softens and breaks down into a thick compote-like filling.
  4. Assemble Base and Filling: Pour the softened berry mixture over the biscuit base and spread evenly. Let it cool at room temperature for 15 minutes, then refrigerate for at least 1 hour to set the filling.
  5. Make White Chocolate Ganache: Place the white chocolate, double cream, and butter in a heatproof bowl. Gently melt together, either over a double boiler or carefully in short bursts in a microwave, stirring until smooth and glossy.
  6. Top the Tart: Pour the ganache over the chilled berry layer, spreading it evenly. Return the tart to the refrigerator and allow it to set for a couple of hours until firm.
  7. Decorate: Before serving, decorate the tart with fresh berries, sprinkle freeze-dried raspberries, and grate some chocolate on top for an elegant finish.
