Ingredients
Cookies
- 48 Ritz crackers
- ¾ cup Nutella (approx. 1 ½-2 tsp. per sandwich)
White Chocolate Coating
- 12 oz. high quality melting white chocolate (approx. 2 cups)
- ¼ tsp peppermint extract
- Holiday sprinkles or crushed candy canes for topping
Instructions
- Prepare Nutella Sandwiches: Spread about 1-2 teaspoons of Nutella onto the flat side of a Ritz cracker. Sandwich it with another cracker to form pairs. Place the sandwich cookies on a parchment-lined pan or plate, then put them in the freezer for 10-15 minutes to firm up the Nutella.
- Melt White Chocolate: While the sandwiches freeze, melt the white chocolate using a double boiler or microwave method. For the microwave, heat in 20-second increments at 50% power, stirring frequently to prevent scorching. The chocolate should be completely smooth before proceeding.
- Add Peppermint Extract: Stir ¼ teaspoon of peppermint extract into the melted white chocolate for a festive flavor.
- Dip Cookies in Chocolate: Remove the Nutella sandwiches from the freezer. Dip each sandwich halfway into the melted white chocolate, allowing any excess to drip off. Use a spoon to spread the chocolate evenly if needed. Place dipped cookies back on parchment paper.
- Decorate and Set: Immediately sprinkle with holiday sprinkles or crushed candy canes while the chocolate is still wet. Repeat with all cookies.
- Let Chocolate Harden: Allow the white chocolate to cool and harden at room temperature, or refrigerate to speed up the setting process.
- Serve and Store: Enjoy your cookies immediately, or store them in a cool place or refrigerator to keep the Nutella filling firm and prevent oozing.
Notes
- White chocolate melts better using a double boiler to avoid seizing and overcooking, though microwaving is possible with caution.
- Alternative nut or seed butters can be used instead of Nutella, but Nutella pairs perfectly with the peppermint white chocolate for the best flavor.
- Store cookies in a cool spot or refrigerate to maintain firmness and prevent Nutella from becoming too soft and oozing.
- Customize these treats for any holiday or season by changing sprinkles and omitting peppermint extract for a year-round dessert.
