  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Seafood Pot Pie Filling

  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 1 1/2 cups seafood stock or chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp Old Bay seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup peas
  • 1/2 lb shrimp, peeled and chopped
  • 1/2 cup lump crab meat (or imitation crab)
  • 1 tbsp fresh parsley, chopped

Cheddar Bay Biscuits

  • 1 cup biscuit mix (like Bisquick)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/3 cup milk
  • 2 tbsp melted butter
  • 1/4 tsp garlic powder
  • Pinch of dried parsley (optional)

Instructions

  1. Sauté Vegetables: Melt butter in a skillet over medium heat. Add finely chopped onion, diced carrot, diced celery, and minced garlic. Cook for several minutes until the vegetables are softened and fragrant, stirring occasionally to prevent burning.
  2. Make the Creamy Base: Sprinkle flour over the cooked vegetables and stir to combine. Cook for about 1 minute to remove the raw flour taste. Slowly whisk in the seafood stock followed by the heavy cream, stirring constantly to avoid lumps. Season the mixture with Old Bay seasoning, salt, and black pepper. Let it simmer gently until it thickens to a creamy consistency.
  3. Add Seafood and Peas: Stir in the peas, chopped shrimp, lump crab meat, and fresh parsley into the thickened sauce. Cook just until the shrimp turn pink and the seafood is warmed through, then remove the skillet from heat to avoid overcooking the seafood.
  4. Prepare Biscuit Topping: In a separate bowl, mix biscuit mix, shredded sharp cheddar cheese, milk, melted butter, garlic powder, and dried parsley (if using). Stir until a soft dough forms. Drop spoonfuls of this cheddar biscuit dough evenly over the seafood filling in the skillet or baking dish.
  5. Bake to Perfection: Preheat the oven to 400°F (200°C). Place the skillet or baking dish in the oven and bake for 18–22 minutes until the biscuits are puffed up and golden brown. Remove from the oven and let cool slightly before serving.

Notes

  • For a gluten-free version, substitute all-purpose flour and biscuit mix with gluten-free alternatives.
  • To make dairy-free, replace heavy cream with coconut cream and use vegan cheddar cheese or omit cheese in biscuit topping.
  • For a lighter option, substitute heavy cream with half-and-half or evaporated milk.
  • The seafood mix can be customized with scallops or lobster for special occasions or personal preference.
