Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the proper baking temperature before you prepare the cookie dough.
- Mix Dry Ingredients: In a large bowl, combine rolled oats, all-purpose flour, baking powder, baking soda, salt, cinnamon, and flaxseed meal. Mix thoroughly to evenly distribute all the dry ingredients.
- Whisk Wet Ingredients: In a separate bowl, whisk together the applesauce, melted coconut oil, egg, honey, vanilla extract, and almond milk until smooth and fully incorporated.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients bowl and stir until just combined, making sure there is no dry flour left visible but being careful not to overmix.
- Add Cherries and Chocolate: Gently fold in the chopped cherries and chopped chocolate pieces to evenly distribute them throughout the dough.
- Shape Cookies: Using a cookie scoop or a heaping tablespoon, drop dollops of cookie dough onto an ungreased cookie sheet spaced apart to allow for spreading.
- Bake: Bake the cookies in the preheated oven for 14 to 16 minutes, or until the bottoms turn a golden brown hue, indicating they are fully baked and ready to be removed from the oven.
