A comforting and flavorful Egg Roll Soup that combines ground meat, fresh vegetables, and savory seasonings in a warm chicken broth. This easy-to-make soup is a healthier twist on traditional egg rolls, perfect for a quick weeknight meal or cozy lunch.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 tablespoon toasted sesame oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon minced ginger
  • 1 pound ground pork, chicken, or turkey
  • 1 teaspoon kosher salt
  • 1 1/2 cups freshly grated carrots (approx 3 large)
  • 1 bag of cole slaw mix (or approx 5 cups shredded cabbage)
  • 6 cups chicken stock
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon fish sauce, optional
  • 1 tablespoon rice wine vinegar

For Serving

  • Green onion
  • Chili crisp
  • Crispy wonton strips

Instructions

  1. Heat aromatics: Heat the sesame oil in a 7-quart Dutch oven over medium heat. Add the diced onions, minced garlic, and minced ginger, stirring occasionally for about 5 minutes until the mixture is softened and fragrant.
  2. Cook the meat: Add the ground pork, chicken, or turkey to the pot. Break it up with a wooden spoon and cook thoroughly until no longer pink.
  3. Add vegetables and broth: Stir in the grated carrots and cole slaw mix (shredded cabbage). Cook for 1 minute to soften the vegetables slightly. Then pour in the chicken stock, low-sodium soy sauce, optional fish sauce, and rice wine vinegar.
  4. Simmer the soup: Bring the mixture to a boil, then cover the pot and reduce heat to medium-low. Let the soup simmer for 10 minutes to allow flavors to meld and vegetables to tenderize.
  5. Season and serve: Taste and adjust seasoning with salt if necessary. Serve hot topped with sliced green onions, chili crisp, and crispy wonton strips for added texture and flavor.

Notes

  • You can substitute ground pork with ground chicken or turkey for a leaner protein option.
  • Fish sauce is optional but adds depth; omit for a milder flavor or to keep it vegetarian if using vegetable stock and meat substitute.
  • Use low-sodium soy sauce to control salt levels in the soup.
  • Leftovers keep well refrigerated for up to 3 days; reheat gently on stovetop.
  • For a gluten-free version, ensure soy sauce is gluten-free and omit crispy wonton strips or substitute with gluten-free toppings.
