Ingredients
Cheese and Herb Mixture
- ¾ cup grated parmesan cheese
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 pinch chili flakes
- 2 cloves garlic, grated (divided)
- 1 cup shredded mozzarella cheese
Other Ingredients
- 1-1 ½ cup marinara sauce
- 12 slices provolone cheese
- 12-16 square egg roll wrappers
- ½ cup thinly sliced pepperoni
- 8 tbsp salted butter (divided)
- 2 tbsp chopped fresh sage
- Water for sealing egg roll wrappers
Instructions
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 425°F (218°C) and lightly grease two baking sheets to prevent sticking and allow even cooking.
- Mix Cheese and Herbs: In a medium bowl, combine ½ cup grated parmesan, dried basil, oregano, parsley, chili flakes, and 1 clove of grated garlic. Stir in the shredded mozzarella until well mixed.
- Assemble Egg Rolls: Brush water around the edges of each egg roll wrapper to help them seal. On each wrapper, layer 1 tablespoon of marinara sauce, 1 slice of provolone cheese, about 1 tablespoon of the mozzarella mixture, and 1 slice of pepperoni. Be careful not to overstuff. Roll up tightly and place seam side down on the prepared baking sheets.
- Butter and Parmesan Topping: Melt 5 tablespoons of butter and brush each roll generously with it. Sprinkle the tops evenly with the remaining ¼ cup parmesan cheese.
- Bake and Flip: Bake the egg rolls for 10-12 minutes until golden and crisp. Flip them over, add 1-2 additional pepperoni slices on top, and bake for another 8-10 minutes. The cheese might melt out slightly—this is normal and adds to the flavor.
- Prepare Garlic Sage Butter: While baking, melt the remaining 3 tablespoons of butter in a small pan over medium heat. Add the fresh sage and cook until the sage crisps up, then remove from heat and stir in the remaining grated garlic clove.
- Finish and Serve: Remove the egg rolls from the oven, brush each generously with the garlic sage butter, and serve with extra marinara sauce on the side for dipping.
Notes
- Be careful not to overfill the egg rolls to prevent bursting during baking.
- If your egg roll wrappers vary in size, use the 12 largest to ensure proper rolling and baking.
- Fresh sage can be substituted with dried, but fresh provides the best flavor and crisp texture.
- Leftover marinara can be warmed for serving or used in other Italian dishes.
- To make this recipe vegetarian, substitute pepperoni with roasted vegetables or omit it entirely.
