Ingredients
Bread and Cheese Topping
- 1 loaf sourdough or French baguette, sliced
- 1/3 cup grated parmesan cheese
- 1/3 cup grated pecorino cheese
- 1 clove garlic, grated
- 2 tablespoons fresh thyme leaves
- 2 tablespoons melted butter, plus 2 tablespoons extra for brushing
- Pinch of freshly ground black pepper
Toppings
- 4 ounces prosciutto
- 8 ounces burrata cheese, at room temperature
- 2 fresh peaches, sliced
- Hot honey, for serving
- Fresh basil leaves, for garnish
Instructions
- Preheat the oven: Set your oven to 400° F (200° C) to get it ready for baking the crostini.
- Prepare the cheese mixture: On a baking sheet, combine the parmesan, pecorino, grated garlic, fresh thyme, 2 tablespoons melted butter, and a pinch of black pepper. Mix these ingredients evenly and spread them in a thin, even layer across the sheet.
- Arrange the bread and prosciutto: Place the sliced bread over the cheese mixture on the baking sheet. Brush each slice generously with the remaining 2 tablespoons of melted butter. Arrange the prosciutto pieces on top of and around the bread on the baking sheet.
- Bake until crispy: Bake the crostini in the preheated oven for 15-20 minutes. The bread should turn golden and crispy, and the cheese underneath will melt, creating a savory crust.
- Assemble the crostini: Once baked, transfer the cheesy bread slices to a serving platter or board. Tear the burrata cheese and scatter it over the warm crostini.
- Add fruit and garnish: Top the crostini with fresh peach slices, arrange prosciutto around or on top, and scatter fresh basil leaves for a herbal freshness.
- Drizzle with hot honey and serve: Finish with a generous drizzle of hot honey over the assembled crostini to add a spicy-sweet kick. Serve warm for best flavor, though they're also delicious at room temperature.
Notes
- For a vegetarian option, omit prosciutto and add roasted nuts or mushrooms.
- Use ripe but firm peaches to hold their shape on top of the crostini.
- Hot honey can be replaced with regular honey and a pinch of chili flakes if unavailable.
- Allow the burrata to come to room temperature to enhance its creaminess.
- This dish is best served fresh but can be prepped ahead and assembled just before serving.
