- 2 ½ cups (238g) old fashioned rolled oats, gluten free if desired
- 2 teaspoons baking powder
- 1 tablespoon pumpkin pie spice
- ¼ teaspoon salt
Optional Mix-ins
- ½ cup (56g) chopped pecans
Optional Cream Cheese Glaze
- 2 tablespoons softened cream cheese
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
- 1-2 teaspoons milk of choice, to thin glaze
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F. Grease a 9x9 inch baking pan and set it aside to ensure the baked oatmeal doesn’t stick.
- Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, eggs, milk, coconut sugar, maple syrup, and vanilla extract until the mixture is smooth and well combined.
- Combine Dry Ingredients: Add the rolled oats, pumpkin pie spice, baking powder, and salt to the wet mixture. Stir gently until all ingredients are incorporated. If using, fold in chopped pecans for added texture and flavor.
- Transfer and Bake: Pour the batter into the prepared pan and smooth the top with a spatula. Bake in the preheated oven for 35 to 45 minutes, or until the edges are golden brown and the center is set and firm to the touch.
- Cool and Make Glaze: Let the baked oatmeal cool for about 10 minutes. Meanwhile, prepare the optional cream cheese glaze by whisking softened cream cheese, powdered sugar, vanilla extract, and milk in a small bowl until smooth and pourable.
- Serve: Drizzle the glaze over the warm baked oatmeal and sprinkle additional chopped pecans on top if desired. Slice into pieces and enjoy warm for a comforting breakfast treat.
Notes
- To make baked oatmeal muffins: Pour the batter into a muffin tin lined with muffin liners and bake for 20-25 minutes, until set. Yields 10-12 muffins.
- The cream cheese glaze is optional; alternatively, serve warm with peanut or almond butter, a drizzle of maple syrup, and a sprinkle of sea salt.
- Add ½ cup chocolate chips to the batter before baking for an indulgent twist combining pumpkin and chocolate flavors.
