Ingredients
Yuca
- 2 lbs yuca (fresh or frozen), peeled and cut into large pieces
- 1 tsp salt, plus additional salt to taste
Mojo Sauce
- ½ cup olive oil
- ½ red onion, julienned
- 8 garlic cloves, minced
- 1 tsp adobo seasoning
- ½ cup lime juice
- 2 tbsp cilantro, minced
Instructions
- Boil the Yuca: Bring a pot of salted water to a boil. Add the yuca pieces and cook until fork-tender, which takes about 14-20 minutes depending on whether you are using fresh or frozen yuca. Once tender, strain the yuca and set aside to cool.
- Remove the Core: After the yuca has cooled enough to handle, cut each piece and remove the tough, fibrous core running through the center. This is essential to achieve the right texture and eatability.
- Make the Mojo Sauce: In a saucepan, combine the olive oil, julienned red onion, minced garlic, adobo seasoning, lime juice, and minced cilantro. Cook over medium-low heat for about 10 minutes, stirring occasionally, until the onions soften and turn a light pink color, allowing the flavors to meld.
- Combine Yuca with Mojo: Toss the cooked and core-removed yuca with the warm mojo sauce until all pieces are evenly coated. Taste and add additional salt if needed. Serve immediately for a vibrant and delicious side dish.
Notes
- Make sure to remove the fibrous core from the yuca after boiling; this improves the texture and makes it easier to eat.
- Adjust lime juice and adobo seasoning to taste for a more tangy or savory mojo.
- If fresh yuca is unavailable, frozen yuca works well too—just adjust boiling time accordingly.
- This dish pairs wonderfully with grilled meats or as part of a Cuban-inspired meal.
